Let’s finish 2018 and start 2019 on the right foot. Time for a Gluten Free Meal Plan.

To say 2018 was busy would be a huge understatement. I traveled more with work and worked longer hours then I ever have. The only plus side is I’m working for myself so all the work and reward are ours.

Meal planning has been seriously missing and eating out has been the default. One of the biggest helpers has been having Home Chef help with the prepared meals with easy ingredients. It’s amazing to have someone else grocery shop and tell you what to make!

2019 already has 6 work trips on the books and many more in the works. We are going to try and do better in 2019 to cook more and eat out less. This will mean more meal planning and meal prepping on the weekends. But our wallet and our kitchen will appreciate it!

Since it is New Year’s Eve this week and I’m traveling, our menu will be slightly different then normal. The bonus for the kiddos is that when I travel Hubby takes them to all the restaurants in town I can’t eat at, so they love it.

Here in the South the traditional New Years Day meal includes: cornbread (represents gold), collard greens (representing money), black eyed peas (representing luck) and hog jowl (represents wealth). For the record I did not grow up eating this as a New Years Day meal, Hubby brought this to the marriage. I’m not a huge fan of all these items but my mother-in-law goes to great lengths to make it Gluten Free for me so I eat at least a bite of each.  And if they had just told me 16 years ago that hog jowl was bacon, I would have embraced it. But now…

GLUTEN FREE MEAL PLAN

MONDAY – Snack foods, see details below

TUESDAY – New Years Day meal as described above that the MIL will make

WEDNESDAY – Tacos and chips and pico da Gallo

THURSDAY  – One Dish Wonder

FRIDAY – Baked Pork Chops

SATURDAY – Hubby taking kids out while I travel

New Year’s Eve Snacks

Cheese Dip

1 lb pork sausage

16 oz velveeta cheese

1 can Ro-Tel tomatoes

Brown sausage, drain fat.

Put all the ingredients in a slow cooker and cook on low for 2 Hours.

Move to Keep Warm once the cheese is melted.

Enjoy with Corn Chips.

 

Ranch Dip and Chips

1 packet Hidden Valley Ranch mix

16oz soup cream

Combine ingredients and refrigerate for at least 2 hours before serving.

Enjoy with potato chips

 

Sausage Balls

1 lb sausage

1 cup GF bisquik

3 cups shredded cheddar cheese

1/3 cup milk

1 tsp Worcestershire sauce

Heat oven to 350 degrees.

Prepare a baking sheet with parchment paper

Combine all the ingredients in a bowl

Roll mixture into 1.5 to 2″ balls and place on baking sheet

Bake for 13-15 minutes

Bacon Cheese Puffs

There will also be milkshakes and cookies to keep the kids energized so they can stay up to midnight. Normal bedtime is 8:30pm, so we will see how they do!
